The Ritual
Every bowl begins at 5am — grains soaked, ferments checked, broth drawn from kombu and dried shiitake that have been steeping since the night before. The truck opens at eleven. Those six hours are the meal.

What We Serve
Brown rice, millet, or amaranth — pressed overnight, sliced cold, served warm with tamari-roasted seeds and a wedge of pickled plum.
Rotating small plates: daikon kimchi, brine-cured cucumber, white miso with toasted nori, brown rice vinegar slaw with sesame oil and shiso.
House-made three-year barley miso, dissolved to order into dashi of kombu and shiitake. One ladle. Served in a handleless ceramic cup.
Amazake — naturally sweet fermented rice, thickened with agar, set in small ceramic molds. Cold. No added sugar. A quiet ending.

Post-class pop-ups for practitioners who've just spent ninety minutes in stillness. The meal extends the practice. We arrive before the last savasana ends.
